Nestled at the foot of the Caucasus Mountains, in the heart of Georgia’s historic winemaking region Kakheti, lies Badagoni winery. In the Akhmeta subregion, in the village of Zemo Khodasheni, this modern winery showcases the ideal blend of nature and technology. Here, where tradition meets innovation, the transformation of grapes into exquisite wine begins – crafted amidst one of the world’s most iconic winemaking landscapes.
The winery is fully equipped in compliance with ISO standards, utilizing cutting-edge technology developed and installed by leading Italian companies. Stainless steel fermentation tanks, supplied by Gortan, Della Tofola, Gimar, are built to the highest standards. Each piece of equipment ensures our machinery’s peak performance.
For the maturation and aging process, we carefully select oak barrels from American, French, and Slovenian origins. These barrels play a vital role in shaping the distinctive character of our wines. Depending on the desired complexity and flavor profile, our wines are aged in these barrels for a period ranging from 9 to 36 months. This aging process infuses the wine with unique aromas, flavors, and textures, imparting depth, richness, and balance. The careful use of different types of oak ensures that each wine develops its own personality, contributing to the overall complexity and quality of our final product.
The advanced technologies used for microfiltration and bottling systems are designed exclusively for Badagoni by renowned Italian companies Bertolaso and Enotec. These advanced systems ensure food safety by preventing oxygen exposure and eliminating any contact with iron, which is essential for preserving the wine’s organoleptic characteristics.
At Badagoni, laboratory analysis begins with the soil and continues at every stage of the winemaking process. To achieve a flawless final product, each wine undergoes detailed testing and examination.
Our facilities boast a high-tech laboratory equipped with state-of-the-art machinery from Anton Paar and Gibertini, including a pH meter, nephelometer, spectrophotometer, Babo refractometer, microscope, thermostat, and ultraviolet lamp. The laboratory conducts a variety of studies, such as microbiological research and analyses for tartar and protein stabilization in wine.
We also utilize the Oenofoss laboratory device, which can rapidly measure multiple parameters, including sugar content, alcohol level, pH, and both volatile and total acidity.
Additionally, Badagoni collaborates with the esteemed international research center Enosis Meraviglia in Italy, led by Dr. Donato Lanati. The final inspection of each product occurs at the Enosis laboratory, ensuring that only the highest quality wines make it to the shelf.
